Ditch the mirror and put in a medicine cabinet with mirror. Hopefully you can cut drywall out between wall studs that is centered over the sink, or close to it. So it is recessed into the wall. Agree on losing the vanity.

As someone said you can't divert the water onto a neighbor. It's inconsiderate, but also illegal and might come back to bite you.
