Is it possible for you to partner with someone that is in that local area?  On an out of state property that I was looking to pick up at auction, I was able to confirm that the photos on the listing were old, & the house was in much better condition than the listing appeared.  This gave me an advantage over anyone that viewed the photos, assumed the worse, & walked away.  While I didn't get win the property at auction, when all was said & done & the purchaser did get it on the market the numbers were in line with my estimations.

Volusia County allows you to pay your short-term rental taxes through the AirBnb website.  As you mentioned about rental laws, be sure that your property is zoned for Short-Term rental.

Your profile states you are in Atlanta, so I assume that you going to be managing remotely or hiring a local manager?  Do you have other short-term rental property, or will this be your first?

Any place that I can recall renting, has required more than $100k & also required to show proof.  That's a reasonable number, imo, to protect the building (not just the rented unit) from damage from a tenant.

"Any recommendations on companies that provide cheap plans?" - I look at this as, you get what you pay for.  A company that specializes in cheap, inexpensive plans probably specializes in not paying out in a claim.  I would go with a well know company, one that I would plan on using for years to come.  Let them know you're wanting to be a landlord.  It's your chance to interview them, find out what they'll do for you.  I would look further than just the monthly expense.  Our renters, auto, & personal coverage policies are with the same insurance company as one of our rentals.  Have been using them since the mid to late 90's.

Congratulations on your first purchase.  These fees are in alignment with our property in Akron Ohio, minus the annual renewal.

Jim,
Have been with CBIZ for a little over a year. They are very STR friendly. Prior insurance companies that I was with had too restrictive of minimum stays (over 7 days). CBIZ was quick to setup, & is very affordable. Have been lucky enough to have had to file a claim with them yet, so can't speak to all of their services.

I have a STR in Daytona Beach. The coast is zoned for STR, & the taxes from my unit are filed with Volusia County. While the building/HOA that my STR is in, is in fact not pet friendly, there are a lot of options up & down A1A.
