My biggest weakness is FOMO as I save up, and just don’t want to miss out on opportunities/connections until I am ultimately debt free.

However, I believe you would have a strong argument in civil court to claim ownership of the missing rent (Not that I'm recommending that action for 5 days of rent). 

There is a LOT of missing info in the youtube videos and the gurus promising to teach you everything about foreclosures.

Does not sound like a great idea to me, unless I'm missing some other purpose of your plan.

Seems like a decent plan except you're missing one important thing. 

Maybe it's the market, maybe you're in it too deep or maybe there's something major like code issues you missed.
