That's how I executed my first property and was fortunate it appraised for over $150k more than what I bought it for only 9 months after purchase so I was able to ditch the FHA and refinance, but that's a pretty extreme case.

Otherwise, if this is an extremely "crunched" area in your local market you may try looking through some more creative lenses, like "homes with 2 kitchens" or homes with a casita/Mother-in-law/ADU.
