Let your insurance know what happened and if and when you are sued, let the insurance company take care of it.Probably, the dog bite would need to be reported and in that case dogs usually must go to doggie jail for observation, mine did, and you can track down where the dog was sent and from there you can find the owner of the dog, unless they just bailed on the dog too.Without a police report or report of the incident to proper authorities, the one bitten has little to goon for any claim, I wouldn't worry about it myself.

Good news for you cracks in granite can be fixed by filling with an acrylic but remember later you need to re-polish it otherwise the crack will remain easily visible.
