The next stage would be to install sheetrock on walls and ceiling, waterproof bathroom walls and install tiles, finished flooring, new kitchen cabinets and appliance, install bathroom fixtures.The problem is time. 

Example:  if a ceiling light needed to be moved and/or installed, I'd highlight where it should go (with dimensions noted) and give that to the electrician.

Make sure they use flat white paint for the ceilings (no shadows or glare). $7k is a great price for that house!

Having stuff stacked to the ceiling and spilling out all over the yard seems like an inappropriate use of the property. 

We moved some walls and redid everything from the floors to the ceiling.

Exploring options to get as much of it as possible to 7' ish ceilings.

Our chosen house is bigger but on a slab, I liked it bc it’s more spacious and looks better quality with tall ceiling etc.
