So far, they have held up just fine, so I will definitely stick with them because they are so much less messy and because re-seating a toilet is no problem whilst you only really get ONE shot with a wax ring.That said, of course, it will be a very long time until I can truly comment on their durability vs. a wax ring since those often last many decades.

I would think that watertight LVP would be better for pets, so maybe that is an option.I get it but tile is durable and easy to replace just one or 2 tiles.

Don't go high end finishes, keep it neutral to appeal to more people and get durable finishes.Find out how much you can borrow (don't max yourself out), get your finances in order (look at your debt).

I would do LVP. waterproof and durable, and have a shot at saving the original floors down the road if needed.
