I am going to remove the cabinet the old range sits on, but I am trying to decide if I should just replace the countertop or cut it and bend some sheet metal or something at the edge where it meets the stove.

Remove the wires feeding the old outlet, tap or cap the ends and bend each wire back against the wall, left or right, high or low, in the same placement they had in the old oulet.

Having said that, you do see a lot of hotels/motels putting their rooms on AirBNB and VRBO.We got our last STR on VRBO in a hotel/resort in Bend OR.

We just got back from visiting family in Bend and camping along the coast.
