It is like Shane's idea, of protected poly wood.What I do is pull all the trim and label and number it.Then TSP it (and this is the non-painted trim recipe for wood trim) and de-gloss it with the abrasive side of scotch bright sponge (which I dip in the TSP).

You will need to degloss the cabinets anyway (whether painted or wood) so go with the abrasive side of a scotch bright sponge for the TSP application there.

Flooring has come a long way so I was hoping there was something line vinyl plank but for countertops in a large slab, I.e. something less expensive than stone, but still impervious to water, and tough enough to defend against any abrasions, scrapes, etc.
