Sounds like Ms. Denise Evans knows her stuff! I would go with her advice. I have invested like that here in Louisiana.

Access is key I think like a few others mentioned above. You don't want something to go wrong i.e. A simple hose fix and you have to tear the entire counter top out to get to it.
