I applaud your desire to learn.

Read everything you can find on the various tasks and try to find a good contractor to work with for a while.  The problem is that several of the items you listed (tile work, floor refinishing, drywall,etc) are not so "basic".  Though they seem simple, they are not. There is so much that goes into doing a job well: i.e. techniques, methods, materials, etc...it really take years to master. So be patient and take the time to learn to do things correctly.  The rewards are very satisfying and enjoyable.

@Joyce Lai  Even with pics, you're taking a big chance dealing with 'out of state' properties.  You really need to hire only very solid and trustworthy contractors, though, of course, they usually cost more.  Good luck.

@Kristina Inglis  I agree with @J Scott.  I think it's better to just hire the contractor. Partnering up blurs the lines between the parties and limits your options if things go wrong.  I see little advantage for either party in such an arrangement.

@Teo W. I don't know about classes but there certainly are lots of books and even videos now that can teach you the basics.  But really the best way to learn building skills is by doing.  Like many things in life, many tasks seem simple but take years to master and do well.   If you really are interested and enjoy the work, I'd suggest finding a contractor to work for for a while.  Install a pan with a drain underneath.

If the subs did the work, they should be paid.  

You say you didn't realize he was unlicensed until it was "too late" but you also say you realized right away that the permit had been pulled in a different name, which made you suspicious. So even though you knew that early on, you let him continue. 

You only seem to care that he is unlicensed now that it's a money issue.  

Sorry: no sympathy here.
