I've been more than willing to cooperate and draft the necessary documentation to protect their investment, but they have since changed their position/requests several times and are now demanding that I transfer all assets to them and walk away. 

The lender said they can issue an escrow analysis once I provide them with documentation of the updated adjusted taxes after my homstead exemption is applied.

As soon as I'm in contract I provided the lender all my documents, bank statements, check stubs, tax returns, etc.

It literally takes about 15 minutes and the company appears as the registered agent on all documents so I'm completely anonymous.

Some of the deals I've been getting are 4-5% interest fixed for 5 years then floating with prime.  15 or 20 year terms.  0 points and maybe $1k documentation fee.Good luck!
