My guess would be if you pitch them on the "deals", you might end up losing your "legal customers" altogether...

Whatever you choose has to be customized for you anyways.  

Is this something that as an Investor would encourage intrest in working with our company? 

It's encouraging to tackle this issue first, because you can take immediate action.2) Have you considered side work or anything related to your current profession that could make some extra money?

, in a way, might encourage lawsuit since the lawyer knows they will get payout?

I suspect my skills fall into these areas as I have a few...business intelligence..business analyst/Project management..data/financial analyst/mgr..customer experience etc..I'm both business and tech both worker and management...Is there any place to find these companies that you know of?

Just explain that you want to learn & improve your processes & are looking for feedback to better serve your customers.
