We then thought it might be worth it to buy a piece of land, move the mh, do some minor cosmetic work (new tile, paint, etc.) and sell it with the land for a much larger profit.

If you want to lighten the look, just paint it a neutral color.As for the rest of the finish-out, if this mobile home is targeted at affordable housing, then you want to give the illusion of luxury without using expensive materials.

I got a quote with another house with the same floor plan - just to paint the house would be at least 5K because of special equipment needed.
