While I do not allow animals, I do include a clause that if the tenant ever considers an animal, they will be reviewed on an individual basis and they would be required to have a breed specific bite liability policy.

Meaning from a legal perspective, as a business, you can't ask about their vaccination status, but if you find out someone is unvaccinated in some other way, there's no legal protection for these individuals from eviction based on their vaccination status.
