They employ 1 guy per shift to swap out server blades and are mostly there for cheap power.  

I like having someone with a badge and gun show up at their door to let them know I'm serious.You are probably thinking of a "process server."

I recommend a private process server for the speed and the ability to instruct the process server to video themselves serving the papers.

If you are having an issue please pay the $75-$95 to have a process server deliver it which they typically get done in a few days.

The restaurant either has counter service or the frugal person tips their server appropriately. 

Doing so may help a process server to identify your tenants on the offchance you ever have to take them to court.
