Of the three, I personally love Bastrop as the geography is more unique with the Colorado River and the lost pines, plus it has a great historical core section with a cool main street.

I will add though that while putting an airbnb in a boat sounds like a cool thing to do, I suppose that most on this site have no idea of how many expenses there are in keeping something like this afloat.
