My visit to Michael's site, was worth it to me to better understand where he operates, not a waste of my time, I won't follow his technique, but it informed me as to the need to give more information on the technical side, I have no idea how Michael tackles that.I'm more concerned about predatory issues, good faith dealing, if the bacon is cooked properly, not how much sizzle it makes frying. :)

By exploring the food scene, farmers market, and cool little bars around town and talking to some folks I've changed my mind.
