Hard surface flooring is definitely the best option.  

We get great results with all kinds of smells, odors, even surface mold.

I regret now only doing the main work surface and not the ones flanking the Range .

They can probably do a visual inspection immediately and indicate whether it is likely or unlikely, then they can conduct a physical test of mold in the air and on surfaces.

What about leaving the cabinets as is and putting a solid surface top on it which will last forever.

As long as the wall or surface is not dirty or moldy I never cared about painting, I did not even notice it.

I am much more disposed to flexibility if they notify me as soon as they know there is an issue, rather than me finding out after the problem surfaces.

That way you can unload groceries and put everything in the fridge or pantry while the bags are on the counter by the stove.If you don't want to move the electrical for the stove, put the pantry and fridge on the other side and keep the stove where it is, adding some storage and counter space....always good to have a place for pots and pans and a cooking surface by the stove.
