There was this really interesting video about having an LLC in WY as well as the state you're doing business from and having the WY one own the other LLC due to added protection... any thoughts on this?

Here in Austin they are allowed but there are restrictions when it comes to adding an ADU such as min sq ft on your plot, attached vs detached, distance from main structure, and how much the roof can cover of your land by percentage. 

You must do this with a smile on your face and no venom in your heart.
