I did easy stuff like demo, framing, drywall, mudding, painting etc. 

As long as you do the demo yourself or hire it out separately, its reasonable. 

(I’m a licensed general contractor btw)We need demo, tree removal, dumpsters, portable restrooms, gravel for driveway, concrete pump and materials, crews for footings and masons.

You have had that setback of having to demo a house.  

It's not only hanging drywall per se, it's buying the material, setup, protect flooring, demo, hang, mud, finish, cleanup, disposal. think about it, how much will you pay yourself if you're going to do it, and at what quality?

I would discuss the demo costs with the adjuster.  

Just trying to save a little time from demoing them all and the setup time.
