Have you given any thought to things like percent of sales you will charge, what types of foods each truck can have (don't want competing trucks), minimum sales requirements to remain, allowing alcohol sales, who pays for trash services, standardizing prices for things like water bottles, etc?

There's a point where yes - you can be that dude (or dudette) on the beach sipping your drink of choice living off 200K a year, however, between the point of that dream and purchasing a property one is going to spend a lot of time value-adding.
