Never forget that you're not just paying them for liability protection - they're also getting paid to arbitrate claims on your behalf, because if they don't you can usually file your own claim on the insurance policy.

Also, the state of formation is likely where internal disputes would be brought among LLC members, so if you and a partner and/or spouse live in CA, you probably want to arbitrate in CA if the two of you had a disagreement.

In NV the escrow company probably won’t do anything unless they have both parties agree in writing to the cancellation and distribution of deposits, or unless they have a court order/binding arbitration, etc.
