Use a small pan. 

Sewer backup is some serious sh*t in their minds (and my opinion, to). 

A completely furnished house...beds, tv, pots, pans, clothes, etc.

A decent contractor grade granite really is not too much more money than Formica, but it’s way stronger and doesn’t burn when a careless tenant puts a hot pan on it - therefore you don’t have to replace it on a turnover.
