In my case, my hot water, stove, and heat is mainly gas, so I was able to get away with 200A service to the home and a 120A sub-panel in the ADU.Also, standard disclaimer about me not being a licenced electrician so take my advice with a grain of salt.

When they left they turned on all the lights, raised all the blinds, turned on all the burners on the stove and turned on the over, stuff the vents with trash, locked the doors leaving the keys inside so we had to break in.

Unless you have to provide Fridge to be competitive with other properties or it's accepted protocol in your area to provide a fridge, I would suggest you not provide appliances other than stove or range.
