I worry it will expose me to a request from IRS to be considered as US citizens and my income tax generated outside the US will also be taxed.

Either way, citizens cannot lose.

Since you have US income, and you are a US Citizen (assuming), you will need to pay taxes on your US income; no matter where in the world you move.
