Give your insurance carrier and adjuster an opportunity to meet with you, explain the claims process, and address your concerns. 

This means that all increased profits I might have over regular rentals, along with utility and such makes this no longer worthwhile.I would rather do Airbnb to be honest, but does anyone have suggestions for insurance carriers (Florida) or other ways to deal with it. 

When you're represented by a lawyer, most carriers literally change the adjuster handling your claim to a more senior adjuster.    

Every carrier that I have talked with have dwelling coverage with liability and medical payout coverage.

There are also ways of dealing with insurance issues by using this strategy, though those recommendations can vary depending on carrier, type of LLC, state, etc.None of this is legal advice, it is simply my personal thoughts on your situation.

They have many many carriers to shop around with so I would find a local agent and start getting some quotes.
