They all last a long time, even peel and stick work very well.

We typically use Kilz on all the floors to mask the smell as well before putting anything new down (assuming you are going to carpet or put planks down).  

As I was masking off the floors to start painting, I got hit in the face with with overwhelming ammonia smell from that corner.

I believe it's easier to replace some pieces of glue or peel and stick than the type that snaps together.

If it's in a state of disrepair - holes, cracks, peeling throughout the house - cut your losses and replace it all with modern gypsum board.

I thought when it fails it will be a good base for peel-n-stick. 

Keep your eyes peeled for restaurants that tend to have higher prices and maybe you can make more money working the same amount of hours by just changing location.
