Need help insuring primary home in Florida.

Found a home in Florida my family likes. It is 18 acres and has a second older home on the property that has not been lived in for years. We would like to keep it and fix it up over the next few years for friends and family to stay. Mostly grandma's for our boys. However, insurance companies are saying it has to be fixed or torn down within 30 days to insure. Can not possibly get fixed up within 30 days. But really want to keep it. Are there any creative or less known options for them to insure the property but not look at this as a liability? Don't understand how I can not find a company that will let us buy this property for what it is and the possibilities it has. Thank you.
