Accepting tenant that gets paid all cash

I’ve been trying to find a tenant for one side of my house hack. An applicant turned in their application and it’s the best i’ve gotten so far, great credit score, no criminal record, no eviction history. The only issue is that she gets paid all cash for both of the jobs she has so verifying income is more difficult because she doesn’t have paystubs. I’ve verified her income for one of her jobs with her employer by going to the job and speaking with the employer directly and receiving a signed employment verification, the other job is a side job for the applicants dad who also pays in cash so verification has been more difficult. I’m thinking of just requiring a co-signer and possibly a double deposit to mitigate risk on my end but wanted to hear how others have dealt with this kinda situation

I'd assume that they would deposit the $ in their account so bank statements could suffice. Unless they just live off the cash they earn and pay cash for everything which would be hard in todays world.(and would also show they arent really saving if there isnt anything in their bank account)
