Hello and welcome to BP! I have heard more than one REI person that you should go where the most competition is. For some reason that seams to be true of successful people. I just depends on if you are better but anywhere in Texas will probably be good. Just make sure the area you pick is diverse in their economy and has a growing population. I was born and raised in Dallas Texas which makes me very aware of the competition. I still live in Dallas County and have been self-employed since 1988.
