i purchased a new build... just wondering if anybody here has any creative ideas on how to document this on my tax refund/return, write it off, deduct it, etc... thanks in advance.

It's just a part of your property taxes. Nothing special.
The $10k SALT cap will apply (anything online from prior to tax reform should be ignored); odds are you are already paying more than that in state income taxes, meaning there effectively is no property tax deduction for owner occupied real estate for most people in California.
Oddly enough, there's no cap for property taxes on rental properties. Oddly enough, the current president is a real estate mogul. Oddly enough, tax reform didn't mess with landlords the way it did owner occupants on the coasts who tended to vote a certain way. Funny how those coincidences work.
