When renewing a 12 month lease with an existing tenant, who already has a deposit, does the lease language change regarding the deposit? Or does the language remain the same as is it assumed that the prior deposit is covering for the deposit?

You write up a new lease, the security deposit amount does not change, you list that as same as before,  if you have a rent increase for the new lease term you'd change that amount.
