Banking Structure: How many Operating Accounts?

How many operating accounts do you have for your business? I use STESSA as a DIY book keeping solution. If I use a separate account for each property (Vacation Rentals; no entities) STESSA will automatically assign all of my transactions to the right property which is great and saves me time. I then just make sure it’s categorized correctly. Easy. However, I plan to scale and wonder if that’s the best longterm solution (I’m sure to hire a book keeper at some point). Should I do what’s easier for me now (one operating account per VR) or do what’s best longterm (presumably one operating account for all properties or a group of properties, ie by state)? CPAs? Book keepers? Accountants?
