How do you hire a commercial builder?

I'm a big fan of the theory of biting off more than you can chew and then chew it!  So I've decided to build a 20-50 unit apartment complex for 2022.  We closed on 1.3 acres today and want to break ground in Q1. 

With such a big undertaking I'd really like to interview a few builders to compare.  I know they're all going to tell me how great they are but I really need to get past the BS. 

Does anyone have any suggestions on questions I should ask or information I should request.  Any help would be greatly appreciated.
