Using R.E. to generate income - Unique & Creative

With summer coming I've been reading the posts on Vacation Rentals, and the blogs that have been written on the subject lately. I have a home in Shasta County, CA that would be ideal for a multitude of uses that could produce income. Though we lease it out as a SFR right now, my imagination runs wild with the different things I could do!

What are some of the ways you use your properties to generate income, other than the standard SFR rentals, etc.?
Vacation rentals, B&B's, Retreat Centers, Agri-Tourism, or ?

What made you think it could be profitable? Income and expenses?

I've always had this strange dream of owning an agritourism beet-farm. Beets are actually pretty interesting.
