Open concept Kitchen Remodel- how to support ceiling? Engineer?

Kitchen Reno in a raised ranch. Want to know if it’s possible to remove the walls separating the kitchen from the dining/living room without using LVL/or any type of beam but instead fasten the ceiling joists to the roof structure? My contractor had this idea and we haven’t moved forward with anything yet but wanted to see if this is crazy or a possibility before even having inspector come check things out.
