How to start Writing off 4 taxes?

Hey Biggerpockets crew!

So I'm confused about how the action of writing off works. I know that I track my expenses for my business and I show it to my CPA, but how do I know if the write off is working?

Also what do you guys use to track write off? Do you guys use quickbooks?
