I understand the "feeling" that he may be ripping you off, but if you get his quote with labor and materials seperate, you can verify and trust his numbers.If you find a contractor who is willing to let you buy every screw, tube of caulk and stud, that way he can't take advantage, I see issues coming up when more materials are needed on the fly and you are not available to get them.

Things move a little slow compared to if I were to do everything myself, but I sleep much peacefully at night knowing that if one guy were to go on vacation or fall sick, or something bad were to happen to him/her, I won't get screwed.

if water is a concern, you want to put in some porcelain. they sell wood-grain tile that is made to look like wood, but you will never warp the boards like laminate. as far as glue, all the products are called 'floating' floors now, they click into each other, installed over a water-proof sheet. any water will ruin a piece or 2, and the idea being you can rip the piece up and put a new one back in. it's actually easier to just install it without glue. they click in, no nails or screws.
