Should I just edit and re-print the lease with updated info (LLC) / payment instructions and have them re-sign and return? 

The logic is that we collect rent no matter what for 12 months after signing the lease, understandable.

The more common mistakes are buying incorrectly, not planning for capital expenses and the cost of money and underestimating operating expenses or having the seller lie on his T-12.
