This was a limited partnership so I was hands-off, but did ask to see records, toured the construction site, etc.

I would not recommend videos sent via text message.If you opt for recording, let your realtor know what you're interested in to see, updates needed, smell, loose tile,  spongey floors,.... pictures are deceiving and expectation setting is extremely important to a successful partnership with your realtor and to secure a great deal. 

I much prefer business partnerships with people who I am unrelated to.

As for setting up ownership, you could use a Limited Liability Partnership or LLC.

To clarify, I don’t have any interest/partnership in Company B.

It can be a partnership or a corporation for tax purposes which you set up yourself (must have its own taxpayer ID).
