I am confident in my ability to learn, I have a fantastic work ethic, and have a deep desire to get started in this industry.

If it seems like a good spot, then I don't see the problem in getting educated, trained, and working with them in the future but at the end of the day its up to you.

I would start out small by giving him routine odd jobs and do as you say, pay them on a per item basis right there on the spot.
