My advice to is to continue doing real estate, as that seems to be where your interest long term, but also get back into another job until the time is right to go “all in” to the real estate arena.

If tenant(s) vacate the property without informing the Housing Authority and payments continue the owner, Section 8 may initiate a recoupment of rental payments made for the months the property was not occupied.I feel that if done properly, it is a good investment.

My question is should we still move into the house and continue our plan but try to move out expeditiously?

I'm trying to decide whether to sell the first SFR I bought or to continue to rent it. 

They should own the property first, renovate it house, and then continue to manage it after you buy it.
