Your best structure may be a series of single purpose LLCs, each of which can be formed as you acquire a new asset.

You will have to answer for yourself a series of questions related to your expected returns and risk profile as there is significant variety in your investment options. 

You do not need a separate LLC for each property or a series LLC!

I would recommend one LLC per property or using something like a series LLC where you can place the properties into individual child cells to minimie liability. .
