I would guess this needs to be deducted off the income of the newly acquired properties, even though the "paperwork" states that the interest is against the initial property that the cash-out-refi was against.

Changing your last name to an initial would be wise (not that it will really stop a sophisticated scammer from finding out who you are, but it doesn’t hurt either and prevents your name from coming up in a google search).
