If you don't have a table to serve 10-12, then show a storage space with portable table and chairs and linens for when large groups stay.

In all there is probably even greater cash flow to be taken from the property but it would likely involve planting a prefab or mobile on the vacant land.Advice is highly appreciated.

You can easily buy liens on "junk" properties - those that are worth less than the lien amount plus legal fees to foreclose.Not that it's the best resource, but at least look at Zillow/Trulia for vacant land values for the former mobile home site.
