I've been trying to get a roommate to move into my house for over a month with no luck.  

Duplex may be a good option to avoid headaches with having a roommates but it may be difficult to find something within 1hr commute as they are not that popular here in Bay Area.

Get a roommate or two, charge them rent, and put that away for your next deal. 

Many people are short sighted when thinking of House hacking, basically they stop at one roommate, but thats not the only way.

I thought about having roommates but a property with some additional unit(s) will lead to more income.

She bought her first house at something like 22yo, lives frugally, prefers to have roommates and other arrangements in order to have zero rent, and is ok with living in C areas as necessary.

Have the room mates pay off the mortgage.

If you're ok with roommates why don't you get a 3 or 4br single family and rent out rooms?

House hacking has been going fairly well so far, even with some roommate/tenant turnover.
