I've looked into soundproofing matting to attach to the ceiling, then the Z channels and another layer of drywall, but I wondered if anyone else has dealt with this.

I'd add hardware and throw down a small rug (with antiskid mat under it). 

Unfortunately this is a case of "if you give a mouse a cookie" and it goes from there.If I were them I would charge extra for holidays. 

Beware of bedbugs getting on your clothes and you transferring them back to your own home- if you wear a haz mat type suit the renters will feel like something is wrong and feel very uncomfortable- but in some heavily infested situations it might be called for.
