Although I wonder from cost & work perspective, is that better/cheaper to do vs demolishing the existing shed and rebuild properly or replacing with a prefab unit (from Home Depot, etc.) after the demolition.

From an insurance standpoint, if your policy was based on Replacement Cost, the company will likely just pay based on the Actual Cash Value (Replacement minus depreciation).
