If they insist it won't reach baking temperatures - oven temperatures are known to vary wildly, especially if it's not a convection oven - I would agree to cover the cost of a repair technician if there is a problem found, and charge them if no problem is found - or reimburse them in a similar fashion.

Sure, it is simpler to use leverage in a SoloK when that is an option, but an IRA can successfully use leverage too.Have you spoken with the primary non-recourse lenders; First Western Federal Savings and North American Savings Bank?
